We interviewed "The Japanese Highball Bar 1923 Krung Thep" (hereafter, TJHB) as a case study for Hoshizaki's kitchen-related equipment. We asked them about the background of implementing the equipment and how they feel about the quality of the products.

The bar offers the deliciousness of various brands of whisky that represent Japan in a way that brings out the most from them. The food menu with original recipes that go well with highballs is another attractive point.

Hoshizaki's freezers and refrigerators that can achieve temperature control to maintain uniform temperature inside the cabinet.
At TJHB, all kitchen equipment, such as refrigerator, ice maker, and dishwasher, are all Hoshizaki brand. Mr. Max, the bar's Head Chef, explains the background behind the implementation as follows.
"We place great importance on the quality of food ingredients, and it is necessary to maintain the freshness of them, so for a freezer and a refrigerator, it was important to have a temperature-control function that keeps the temperature inside the cabinet uniform even if the doors are opened and closed frequently. Not only myself but also Japanese executive chef has confidence in Hoshizaki's products, which are a Japanese brand. The chef has used Hoshizaki’s products at another restaurant in the past, and he is convinced that the products can meet our requirements. For this reason, we currently have four Hoshizaki’s products: vertical refrigerator, horizontal refrigerator, ice maker and dishwasher
Another particular feature of the bar is the [temperature of the glass]. Since the temperature of the glass has a great influence on the taste and quality of the highball, a table-type refrigerated showcase is used that makes it easy to control the temperature and allows the glasses to be seen during cooling.

"Temperature control is as important for glasses as for food ingredients. However, the showcase is opened and closed frequently when there are multiple orders, so we chose Hoshizaki’s product that quickly recovers the temperature inside the showcase. Both the refrigerator that manages the food ingredients and the showcase that cool the glasses meet the temperature control standards we require,” says Ms. New, a bartender.

Mr. Max, the Head Chef, explains about the Hoshizaki’s ice maker installed at TJHB, which demands high quality in its ice.
“We use ice made from Hoshizaki’s ice maker for food preparation, cooking, etc. We have been using Hoshizaki’s ice maker since our opening, and we are very happy with it. There is no condensation inside the machine, and the ice is clear and uniform in size.”

They have also installed Hoshizaki’s dishwasher, and they are satisfied with not only its washing power but also its drying and sterilizing effects, as well as its hygiene. When a problem occurred with the dishwasher that washing water did not come out when it was first installed, it was able to be solved onsite with only advice from the service team, and no problems have occurred since then.
Based on trust and achievements, Hoshizaki’s products will be installed at the second location as well.
The Japanese Highball Bar 1923 Krung Thep is currently located at The Commons Thonglor, and plans to open a second outlet at The Commons Sala Daeng sometime next year.
“We've been open for about five months now, and we're very happy with the Hoshizaki’s products we've installed, as they provide the quality we're looking for. In particular, we have great confidence in the temperature control in the freezer and the refrigerator, which is of utmost importance to us. We expect them to last for a long time because of their durability. We will of course be installing Hoshizaki’s products in our second outlet, which will be located in The Commons Sala Daeng.” (Mr. Max, the Head Chef)
