This time I interviewed Mr. Takamoto of Bangkok Tsurukame in Thonglo and Mr. Hirohata, MD of Hoshizaki Thailand as an introduction case of commercial refrigerator of Hoshizaki.
■First of all, how did you know Hoshizaki?
Mr. Takamoto:I think I knew Hoshizaki in free newspaper when I opened Bangkok Tsurukame. At that time I was thinking to buy refrigerator and freezer to open a shop and I was considering to buy the ones of local brand.
But the head chef who has 20 years’ experience as a chef in Japan recommended “Hoshizaki is Lexus in refrigerator industry, so I tried to ask Hoshizaki for a quotation.
■But if the fridge is Japanese and Hoshizaki brand, I think the price will be very high compared with local one.
Mr. Takamoto:Yes, I thought so first. But I received the actual quotation, and the price difference from local maker is smaller than I imagined. If so, I thought it’s better to use good one and I introduced the refrigerator of Hoshizaki.
Mr. Hirohata:There is a product called “A1-Fit”(A-Fit made in China), which reduced costs by designing in Japan and producing in India and China. This time Mr. Takamoto bought this A1-Fit.
A1-FIT has a special specification to be able to use in the hot area like South East Asia, India and Middle East and it has a capacity to keep temperature showing in catalog accurately, even though the temperature around refrigerator is 43 degree. 43 degree means it has reached the temperature of “Class T” which is world highest standard. Japanese industrial standard is 30 degree. (Japanese Hoshizaki is set as 35 degree)
■Even though the product price is low, the performance meets the world top standard. That’s great!
Mr. Hirohata:In Hoshizaki, we bought the refrigerators of Thai local maker and Japanese maker produced in Thailand and test the performance. But there are many refrigerators which did not reach the temperature showing in catalog or took very long time to reach the temperature.
■What do you think after you actually used Hoshizaki refrigerator?
Especially Bangkok Tsurukame is using sardines which are spoiled easily, so it is a big advantage in finance to be able to keep for a long time.
■I understand that it is important to purchase with maximum freshness and preserve in the best way to eat fresh raw sardine in Thailand.
Mr. Hirohata:As a special feature of Hoshizaki products, 2 things are listed as below.
➀ Keep the specified temperature under the circumstances of high temperature
(Meet world top standard)
➁ Keep the setting temperature by holding the difference to the minimum. (±1℃)
This will have a big influence on food freshness and preservation period. Ice cream is a good example. It is ice cream but sometimes there is an ice cream with crunchy texture. That is because of defrosting freezer.
■Defrosting?
Mr. Hirohata:Just like the name, defrosting is to melt the frost by increasing the temperature in freezer (cooler) and it was normally done once 6 hours. For the freezer with low performance, ice will melt once because the temperature inside freezer will reach the plus when defrosting. After that the temperature inside freezer goes down and it gets hard again, so the moisture will be on the surface and become crunchy texture.
■I see. I was wondering for a long time, but I got it.
Mr. Hirohata:Yes. Hoshizaki freezer A1-Fit has no defect like that because it can keep -15 degree while defrosting.
■It might be a good idea to put ice cream in freezer and check performance. Thank you for sharing your good story.
